Parasole Restaurant Holdings’ popular PITTSBURGH BLUE STEAKHOUSE concept has opened in the luxury HILTON ROCHESTER MAYO CLINIC AREA HOTEL, culminating a partnership between Parasole and Titan Development & Investments.
Minneapolis, Minn., (4/08/2019) A world-renowned center for medical care can now lay claim to a worldclass steakhouse with the opening of Parasole Restaurant Holding’s PITTSBURGH BLUE STEAKHOUSE in the Hilton Rochester Mayo Clinic Area Hotel, part of Rochester, Minnesota’s Destination Medical Center (DMC) initiative. The first out-of-town location for Minneapolis-based PITTSBURGH BLUE, the restaurant also represents a first for
the Rochester community. “This will be the city’s first true steakhouse and its premier private dining and meeting venue,” says Parasole CEO Phil Roberts.

An Experienced Team
PITTSBURGH BLUE in Rochester may be a new restaurant, but its leadership team is hardly new to
the business of running a top-notch establishment. General Manager Bruce Paine, who resides in Rochester, has opened several restaurants over the course of his career. Executive Chef Nate Bauer is an alumnus of Manny’s Steakhouse, perennially rated by the Zagat guide as one of the top ten steakhouses in America. “Pittsburgh Blue will be one of the most prominent restaurants in the city, and that has attracted the area’s most accomplished professionals,” says Paine.
A Premier Location
PITTSBURGH BLUE is the signature restaurant in the new luxury Hilton Rochester Mayo Clinic Area hotel, a cornerstone of the city’s Destination Medical Center (DMC) initiative. A robust,20-year, $5.6 billion economic development initiative – the largest in Minnesota’s history – DMC will generate high-value jobs, new tax revenues and provide the impetus to new businesses for Rochester.

A Steakhouse Unique In Rochester Proprietary Cuts of Aged Midwestern Beef
Master butchers hand-trim PITTSBURGH BLUE’s specially aged Midwestern Beef, available in a range of cuts, including a bone-in New York strip, porterhouse (for one or two), cowboy ribeye, and a range of filet mignons, including a horseradish-crusted filet, mushroom-capped filet, and a filet “Oscar” topped with a lump crab cake and asparagus with Béarnaise. Rare cuts such as a 16oz dry-aged bone-in tenderloin and spinalis, the cap of the ribeye, will also be offered as availability allows. PITTSBURGH BLUE also offers salt-crusted prime rib, featuring 21-day aged midwestern prime rib, slowly roasted with sea salt and herbs.
Specialty Seafood
Super-fresh seafood, sustainably sourced and expertly prepared, provides non-meat eaters with a bounty of offerings. Among them: pistachio-crusted walleye, soy miso-glazed sea bass, seared sea scallops and seafood thermidor. Alaskan king crab legs, available by the pound, will also be offered on a limited basis.
Chicken, Pasta & Specialty Cuts – and More
Rounding out the menu at Pittsburgh Blue are favorites including oven-roasted chicken, short rib pappardelle, rack of lamb, wild mushroom ravioli, and Moroccan chicken. Starters range from a hummus trio, calamari with sweet peppers, and tuna tartare to bourbon maple-glazed bacon, and sea scallops “benedict.” Soups, salads and table-sized side dishes include the restaurant’s famous hash browns Blue-style, laden with applewood-smoked bacon, onion, tabasco and blue cheese. The restaurant also offers a range of entrée salads, burgers and sandwiches, including a true New England-style lobster roll.
The Blue Tavern: Rochester’s Best Bar – And Happy Hour
The Blue Tavern at PITTSBURGH BLUE combines a casual, come-as-you-are ambiance with a range of affordably priced food and drink options. Shareables range from freshly shucked oysters to buffalo chicken wings, crab & shrimp nachos, and hummus & naan. For those interested in a meal, the Blue Tavern offers burger and sandwich platters, as well as “Blue Plate” entrées. The full dining room menu is also available in the Tavern. Happy Hour, offered seven days a week, features a broad selection of specially priced food and drink offerings. Drinks begin at $5 for select craft beers, house wine and rail cocktails. Eating options range from $6 lettuce wraps with grilled chicken and honey-miso sauce to a $9 Pittsburgh Blue Triple-Stack Burger, featuring three patties with American cheese, charred onions, pickles and special sauce.
Private Dining (With Mass Appeal)
Other party rooms seem generic compared to PITTSBURGH BLUE’s two private dining environments, each as comfortable and distinctive as the restaurant itself.
The Blue Room – Accommodating approximately 48 guests, this private dining room features a full A.V. setup including flat screen TV for presentations and flexible seating configurations to accommodate a wide range of events .
The River Room – Accommodating up to 16 guests, this AV-equipped environment is ideal for working dinners, strategy sessions and intimate celebrations.
